Not all pasta is the same. The quality and coarseness of the flour, the quality and proportion of egg and the production process all impact on the taste and texture of pasta. We use the more expensive coarse durum wheat semolina flour and a good proportion of pasteurised liquid egg. Flat pasta is produced using the laminated production method; this produces a finer quality of pasta than extruded. Our filled pasta have a high proportion of filling. For example, our standard size ravioli is 60% filling and 40% pasta by weight!

We can supply you with consistent gourmet-quality pasta for all your needs allowing your staff to concentrate on more cost-effective tasks! It also means that you don't need to allocate limited budget for investing or renewing expensive professional pasta machinery.

Unique Proposition: Made-To-Order Quick Frozen Gourmet Pasta

Fresh pasta is difficult to store and transport. We have perfected use of modern quick freezing technology as a way of ensuring our customers receive the freshest pasta product possible.  The pasta is made fresh to order and then quick frozen immediately after production. Once cooked (from frozen - no thawing), the pasta has the freshness, taste and texture as if you had just made the pasta from scratch in your own kitchen. Another key benefit of quick freezing filled pasta is that it allows us to produce much smoother and creamier fillings when required.

Using our quick frozen fresh pasta enables you to:

The range of flavoured pasta uses fresh and natural ingredients in a variety of laminated and extruded shapes. In addition to the standard fresh herb and tomato pastas, we offer squid ink, chilli, chocolate and many other exciting flavours allowing the creation of innovative dishes.

 

Components

 

Sometimes you may want to retain the final assembly of filled pasta so as to use your own fillings or to be creative with your own shapes. We can supply 1kg rolls of fresh laminated pasta that can save your chefs from the arduous task of producing consistent quality
